The finished product: Healthier General Tso Chicken Over Brown Rice
Lean Chicken breast chopped into pieces
1 tablespoon olive oil
1/3 cup cooking sherry
3 tablespoons rice vinegar
1 teaspoon of minced garlic
1/4 teaspoon ginger
2 tablespoons sucanat
1 1/2 teaspoon red pepper chili paste
Scallions chopped
Steamed broccoli(optional)
For thickening roux
1 tablespoon wheat flour
2 tablespoon wheat germ
Mix your thickening roué in a bowl with a little water until thick and set aside
In a fry pan on medium/high heat add olive oil then when hot place chicken pieces and cook until well done. Then place chicken pieces in baking pan in oven on 375 until Brown. In same pan you used to cook the chicken on medium heat add your scallions, garlic and sherry. Cook for a few seconds then add rice vinegar, ginger, sucanat, and chili paste and cook for about a minute. Then add a little bit at a time of the thickening roux until you reached desired thickness. Mix chicken and broccoli in pan until well coated with sauce and enjoy!
